If you are a pizza lover like myself…you are in for an amazing treat with this recipe.
I shared my measurements of ingredients below…but feel free to adjust to fit your macros, meal plan, or liking.
You can enjoy this meal for breakfast, lunch, or dinner!!
Non Stick Spray ~ Pam olive oil
Pepperoni ~ I used 17 Hormel Turkey Pepperoni
Egg Whites ~ 1/2 cup …I used the carton ones..separate the egg if you want..however you do your egg whites
Cheese ~ I used 1 slice of Alpine Lace Reduced Fat Provolone and a sprinkle of reduced fat shredded cheddar cheese
Marinara or Pizza Sauce ~ I used 1/8 cup Rao’s Homemade all natural marinara sauce ( I don’t like a lot of sauce on my pizza)
Raw spinach 1/4 cup (optional)
In fact you can add any toppings you like…mushrooms, onions, ground turkey, bell peppers..the options are endless…get creative
Use a medium size frying pan and spray with non stick spray.
Set at medium heat on stove.
Place your pepperoni (I used 17 turkey pepperoni) in the frying pan..let cook for a few min.
Then pour egg whites (I used 1/2cup) slowly into the pan on top of pepperoni …as the eggs are cooking I use a spatula around the edge of the omelette to avoid sticking.
Once the eggs are cooked some… I added raw spinach
Once the eggs cooked most of the way..I added 1 slice of provolone cheese and 1/8 cup of marinara sauce..flip into omelette..I then sprinkled the top with shredded cheese…and let cook for another few minutes. You can flip if needed.
