Turkey or Beef Stuffed Bell Peppers


1 lb Turkey Meat or Lean Beef (I used Extra Lean Turkey)
1/2 cup chopped white onions
1/2 cup spinach (fresh or frozen)
Red Peppers (Red is my favorite..can use green, yellow, or orange)
Seasonings..use your favorites.. I used Mrs Dash Table Blend
Marinara Sauce….I used no sugar added all natural whole tomato Marinara sauce.
Optional: 1 tbs parmesan (or another low fat shredded cheese, such as mozzarella).
Optional: Brown rice or Quinoa ~you can add this to the mixture for your complex carb . You can omit for low carb meal.


Preheat oven to 350 degrees.

Cook ground turkey in skillet..once it is almost cooked add chopped onions, spinach, I added 3-4 tablespoons of marinara (add more if you like) and seasoning.

Stir and continue to cook until turkey is completely cooked.

Wash red peppers, and cut around the stem to remove. You an cut peppers in half length-wise (like picture below) and remove the seeds and ribs inside the peppers OR cut the top off and

remove seeds and ribs (like picture above)

Set peppers on baking pan.

Add meat mixture into bell pepper.

Optional:  Sprinkle 1 tbs parmesan over each pepper (or another low fat shredded cheese, such as mozzarella), feta or any other kind of cheese.

I put an extra tablespoon of marinara on top before baking…Bake for approx 20 mins!

Don’t forget you can add quinoa or rice (brown or white) to the mixture

Additional options..you can mix corn, black beans in with beef or turkey and add sour cream or plain greek yogurt (great substitute for sour cream), use salsa instead of marinara  for a Mexican Stuffed Bell Pepper.
